Description

This is one of those cups that immediately feels a bit different.

It opens with soft whisky-like notes, warm and slightly boozy in character, but clean and controlled. Then comes a bright touch of grenadine, adding a juicy red sweetness that keeps the cup lively and fresh.

Cinnamon runs quietly through the profile, giving it structure and a gentle spice without taking over. In the finish, there’s a hint of red berry candy, light and playful, rounding everything off.

The balance is what makes it work. Sweet, bright, a little unexpected, but still very clear and easy to drink.

Behind this profile is the Yellow Diamond process, a method developed in Costa Rica and shaped by careful, almost jeweller-like precision. During drying, the beans take on a golden tone as natural sugars concentrate inside, building depth and sweetness. It’s a slow, controlled transformation, where timing and experience define the final result.

Costa Rica has become a place where these kinds of processes are not just possible, but refined. Stable climate, high altitudes and distinct wet and dry seasons give producers the freedom to experiment and push flavour further.
