We use two roasting methods because they shape flavor differently.
It’s not about dark or light.
It’s about how heat reaches the coffee.
Scandinavian
Hot air roasted, with minimal contact with metal.
Clean aromatics, bright acidity, fruit-forward profiles.
Mediterranean
Slow drum roasting.
Full body, sweetness, warm and rounded flavors.
