Origin & Soul

In the heart of Huila, among lush green mountains, lies Coocentral — a cooperative uniting thousands of farms and families who care for coffee as deeply as they care for the land itself. Across seven towns (Garzón, Gigante, Agrado, Pital, Tarqui, Suaza, and Guadalupe), farmers dedicate themselves to every cherry: handpicking, checking ripeness, and paying attention to the smallest details.

Terroir

Grown at altitudes of 1,300–1,900 masl, in volcanic soils with sunny days and cool nights, this coffee benefits from ideal conditions for slow cherry maturation, sugar accumulation, and the development of complex aromas.

Processing

The lot is fully washed, with strict quality control at every stage. After harvest, cherries are hand-sorted, floaters removed, depulped, fermented, washed, and then dried to about 12% humidity on patios or raised beds. This meticulous process ensures a clean cup with minimal defects and a consistent flavor profile.

Cup Profile

The cup is balanced and comforting: notes of dried fruit and berries, with accents of milk chocolate and a hint of nut. Acidity is bright but not sharp, the body is medium and velvety, and the aftertaste lingers warm, smooth, and gently fruity with a touch of chocolate.
